Tuna Patties

Serves 4

Meat Meal

Crispy on the outside and tender inside, these flavorful tuna patties are a savory, protein-packed bite with a hint of herbs and seasoning.

Ingredients

2 Cans Drained Tuna Fish
3 Diced Green Onion
1/3 Cup Chopped Fine Cilantro
1/2 Seeded Jalapeño
1/2 Cup Panko Bread Crumbs
1 Egg
1 Tablespoon Mayonnaise
2 Tablespoon Lemon Juice
2 Tablespoons Greek Yogurt
1 Teaspoon Extra Virgin Olive Oil
1 Teaspoon Paprika
1/2 Teaspoon Black Pepper
1/2 Teaspoon Kosher Salt
4 Serving Fresh Herb Sauce

Directions

  • Preheat oven to 400
  • Chop scallions
  • Seed and dice jalapeño
  • Juice lemon
  • Drain tuna fish
  • In a large bowl, combine all ingredients EXCEPT FOR OIL! Mix well.
  • Use a 1/3 cup measuring cup, scoop mixture and form into a patty
  • Place patties on paper lined and lightly oil
  • Bake for 15 minutes, until tuna patties are lightly crisped and golden , flip and cook other side
  • Fresh Herb Sauce:
  • 1/8 Cups Mayonnaise, 1/8 Cups Greek Yogurt, 1/8 Cups Chopped Fine Fresh herbs, 1/16 Teaspoons Black Pepper, 1/16 Teaspoons Kosher Salt
  • Chop herbs (using what we have fresh from the garden), In a medium bowl, combine the sour cream, mayonnaise, and the herbs. Season with salt and pepper
