Greek Salmon Salad

Serves 4

Meat Meal

A fresh and vibrant salad with tender salmon, crisp vegetables, briny olives, and creamy feta, all tossed in a light Greek vinaigrette.

Ingredients

1 Pound Salmon, season with: 1/8 Teaspoons Kosher Salt, 1/8 Teaspoons Black Pepper, 3/4 Teaspoons Oregano
Salad: 8 Ounce Chopped Leaf lettuce, 10 Ounce Cherry/Grape Tomatoes, 1 Sliced Bell Pepper, 1 Sliced Cucumber, 1/2 Sliced Thin Red Onion, 3 Ounce Feta Cheese
Dressing: 1/2 Ounce Extra Virgin Olive Oil, 2 Lemons, 2 Cloves Chopped Garlic, 1/2 Ounce Mint, 1 Teaspoons Oregano, 1/2 Teaspoons Paprika,

Directions

  • Preheat the oven to 425 degrees
  • Pat the salmon dry on both sides and season with kosher salt, pepper, and dried oregano
  • Arrange on a lightly oiled sheet pan and brush the top of the salmon with extra virgin olive oil
  • Bake the salmon in the heated oven for 8 to 12 minutes until it’s done and flakes easily
  • Prepare vinaigrette dressing: In the small bowl of a food processor fitted with a blade, add olive oil, lemon juice, garlic, fresh mint, oregano, and paprika. Add a pinch of Kosher salt and black pepper. Blend until well-combined.
  • Chop veggies and prepare the salad. In a large salad bowl, add the lettuce, tomatoes, bell peppers, cucumbers and red onions; don’t add feta yet
  • Place salmon on top. Sprinkle with feta
