Banana Oatmeal Chocolate Chip Cookies

Ingredients
2 Cups Flour, Whole Wheat
2 Eggs
2 1/2 Cups Oats
2 Mashed Banana
1 Cup Chocolate Chips
2 Sticks Butter
1 Cup Coconut Sugar
1 Tablespoon Molasses, Black Strap
1 Teaspoon Vanilla Extract
1/2 Teaspoon Xanthan Gum
1 Teaspoon Baking Soda
3/4 Teaspoon Cinnamon
1/2 Teaspoon Kosher Salt
Directions
Preheat oven to 335.
Cream butter, sugar, molasses, eggs, vanilla, and banana.
Add dry ingredients and chocolate chips.
Roll into consistently shaped balls and smoosh JUST A LITTLE onto lined cookie sheets.
Refrigerate for ONE hour! This is important to prevent major flattening! (if we are pressed for time, stick in freezer for at least 25 minutes!)
Bake 10-12 minutes.
