Spicy Bolivian Chicken

Serves 4

Meat Meal

Spicy Bolivian Chicken is a bold, flavor-packed dish featuring tender chicken simmered in a zesty blend of spices, tomatoes, and a touch of heat for a rich and comforting meal.

Ingredients

3 Chicken Breast cut to bite sized
3/8 Cup Peanut Butter
1 1/2 Cup Vegetable Broth
1 Sliced Thin Bell Pepper
5 Ounces of Peas
1 Chopped Onion
1 Clove of Minced Garlic
1 Tablespoon Canola Oil
1/8 Cup Panko Bread Crumbs
1/16 Teaspoon Black Pepper
1/16 Teaspoon Kosher Salt
3/8 Teaspoon Red Pepper Flakes
3 Serving Couscous
1/16 Bunch Garnish Parsley

Directions

  • Chop onions
  • Slice Bell peppers into thin strips
  • Mince garlic
  • Slice chicken into bite size pieces
  • Season chicken with salt and pepper. In a skillet heat oil over medium heat
  • Add chicken and sauté, stirring and flipping, for 3-5 minutes, until chicken turns opaque. Remove chicken and set aside
  • Add onions, bell peppers, and garlic to pan
  • Sauté 3 minutes, until onions are tender
  • Stir in red pepper flakes
  • Add broth and peanut butter
  • Simmer, stirring occasionally, for 10 minutes
  • Stir in chicken, peas, and bread crumbs
  • Cook 5 to 10 minutes, stirring occasionally, until sauce is thickened and mixture is heated through
